that is just were you level the ground from its high and low spots . and keeping in mind of runoff . not to much and not to little .you have seen the trucks with the big tube in the bead . that is how they measure the height of the ground .
Allot depends on which end of the shovel your talking about.I trust the smart end (boss).A good horticulture education is very beneficial.Math is also very helpful in figuring out prints/drawings.A good understanding of erosion controls,types of rock,mulches,boulders.Retaining wall education/knowledge is helpful.The list goes on.
There are community collages that have courses in horticulture and they work with allot of aspects.

A landscaper is a person who literally designs a yard, from any hardscapes (rocks, benches, terracing, fencing, etc.) to sculpting the soil, to choosing and planting the plants to be included. You could become a landscape architect, but you can do landscaping without a degree, too. You should have a good eye for what goes well with the building, for good design, and for what types of plants work well in different environments (types of soil, sun or shade, etc). My father is an architect who does his own landscaping, but he has his own practice, so you might call different architectural firms in your area to find out if they use landscape architects, and about what the salary is.
